What Is Sodium Benzoate? Sodium benzoate is best known as a preservative used in processed foods and beverages to extend shelf life, though it has several other uses. It’s an odorless, crystalline powder made by combining benzoic acid and sodium hydroxide.
Is Sodium Benzoate Safe? Sodium benzoate is generally recognized as safe and can be used as an antimicrobial agent and flavoring agent in food with maximum usage of 0.1%. It’s also generally recognized as safe (GRAS) when used as a preservative in feed.
Due to its properties, sodium benzoate is used to preserve food products with an acidic pH, such as fruit pulp and purees, jams, pickles, pickled herring and mackerel, margarine, olives, beer, fruit yogurts, canned vegetables, and salads
